Nut and berry layered breakfast...

Nut and berry layered breakfast (2 to 4 people)

100g raw walnuts

100g raw almonds

50g raw pumpkin seeds

50g raw flaxseeds

1 punnet of blueberries

1 punnet of raspberries

1 quantity of raw vanilla cashew cream

Soak all the nuts and seeds for 30 minutes to 1 hour and drain. Then tip them into a food processor and blend until coarsely chopped.

To serve, place a layer of berries in the bottom of a glass, a layer of nut mix on top, and spoon over a layer of the raw vanilla cashew cream. Repeat the layers and decorate with berries.

Raw vanilla cashew cream

100g raw cashews, soaked for one hour and drained

60-125ml of water

1 teaspoon vanilla extract

Drain the nuts and put in a blender with 60 ml water. Add more water if necessary to make a smooth cream. Add the vanilla extract and blend for a few more seconds.
