Chocolate and apple muffins...
Chocolate and apple muffins
For the Batter
140 g Almond flower
4 tbsp arrowroot
1 tsp bicarbonate of soda
1-2 tbsp honey
1 tbsp raw cocoa powder/cacao powder
1 large apple cut into 2.5cm chunks
1. Preheat the oven to fan 180°C/gas mark six. Line a muffin tray with paper cases and grease the cases with a little melted butter.
2. Whisk the eggs in a bowl, then add the rest of the batter ingredients and 3 tablespoons water, whisking well to combine.
3. Stir in the apple chunks and spoon into paper cases.
4. Bake in the oven for 20 to 25 minutes until nicely browned. Remove the cooked muffins from the tray and leave to cool slightly on a wire rack.
